It’s hot, y’all. We’re hot, you’re hot, the plants and veggies are hot. Plus, this is the time of year when everything is ready to be harvested all at the same time, and we are busy getting veg out of the ground and into your bellies. So, when it comes time to make a meal, we’re looking for the quickest, easiest, coolest options whenever possible, and we bet you are, too. We compiled a list of recipes that require little to no cooking, most of which can be enjoyed cold, and can be whipped up in a jiffy. We’ll be leaning on these ones all summer!

Pasta Salad / Cold Noodles
You only need to turn the stove on long enough to boil a pot of your favorite noodles, and the rest is a cakewalk–throw in tomatoes, cucumbers, peppers, and toss with a homemade or store-bought dressing and you have lunch prepped for the week. You can also opt for other cold noodle dishes like Soba, or skip the stove and rely on veggies as the “noodles” instead. Cold Soups
The idea of cold soup might turn you away, but you may only be thinking of gazpacho or borscht, and there are plenty of other cold soup recipes out there. Once it gets hot enough, you may just have to give them a try! Read even more about “Ice Soup” in this past blog post.

Tacos
It’s Texas, y’all! You gotta learn to make good tacos living here. Tacos are great because you can really just throw whatever you have in a tortilla with a drizzle of sauce and it always turns out to be tasty. It requires some cooking, but it’s pretty quick. My (Ashley’s) go-to is frying or scrambling up a couple eggs, sauteing mushrooms, veggies, beans, and/or meat, dressing it up with sauce, pickles, raw veg, and that’s it! You can make them your own, or consult the recipes below for some inspiration.
