Approaching Abundance: Spring Veggie Forecast + Recipe Roundup

Despite getting whiplashed by hot ‘n’ cold Texas weather, the farm is looking lush and new spring veggies are growing big and juicy. We are so grateful to those of you who eagerly signed up right when we restarted the CSA and stuck with us even during the weeks when veggies were a bit tight. Now, we are moving into the season of abundance and your shares will be bursting at the seams with so much fresh veggie goodness. For anyone on the fence about signing up, our CSA membership is nearing its threshold with just about 20 spots still available, so get on it if you want it!
We’re coming at you this week with a Veggie Forecast + Recipe Roundup combo to make the most of these succulent spring veggies.
Ready Now (what you’ll see in the next couple CSAs)
Sprouting Broccoli
Kale: Hydra + Winterbor
Collard Greens
Lettuce Heads + Romaine
Spinach
Zucchini (first tiny harvest this week!)
Dill
Cilantro
Celery
Fennel
White Shurio Radishes
Coming Soon:
Spring Onions: 2 weeks
Beets: 2-4 weeks
Spring Carrots: 2-4 weeks (the carrots going into shares right now were bulk harvested a few weeks ago from our last winter crop, but they are still delicious and store great)
Kohlrabi: 2-3 weeks
Going into the Ground:
The first round of summer Melons will be direct seeded in the next week or so
Another round of Zucchini and Cucumbers will be planted soon
Eggplant transplants are going out this week

I don’t know about you, but listing out all these veggies is making me hungry! Here are some great recipes to get you inspired in the kitchen and do some testing and tweaking for your upcoming Easter feast.
Broccoli Love
Note that our Broccoli this season is bunched Sprouting Broccoli/Broccolini versus Broccoli Heads. The stems are supple, snappy, and sweet–just as good, if not better than the favored florets. You can sub Sprouting Broccoli for any traditional Broccoli recipe, but don’t waste those stems!
Copycat Panera Broccoli Cheddar Soup that also includes Carrots + Celery
Broccoli Frittata–I love the eggs + broccoli combo. Throw some mushrooms in there, too, if you have them for an extra burst of flavor and texture

Using Up All That Lettuce
The Lettuce Heads have been popping off this season and landing a feature in the CSA shares for a few weeks in a row now. Salads are a go-to, but here are some other ways to spice things up:
